Ajwa Dates and Black Magic

ingredients

Flour 1 kilo

400 grams of milk

100 grams of water

Salt 1 tablespoon

Sugar 1 tablespoon

Fresh dough liquid or pour liquid dough 42 grams of liquid, 1 tablespoon of powder

Dates without seeds 400 grams

3-4 tablespoons of liquid oil

1 tablespoon of cumin seeds

Cumin powder as needed

Cinnamon powder 1 tablespoon

How to make date cookies

  1. Mix flour and cumin together and add some liquid oil to it. The amount of oil should be such that the flour is moistened and the mixture looks like breadcrumbs. This combination is better to rest for 8 to 9 hours.
  2. Put the cumin and cinnamon powder together with a spoonful of butter on a low heat and heat it a little. Then add dates to them. After it cools down, make small walnut-sized balls from this mixture and keep it aside.
  3. Mix sugar and semi-heated milk and then add the dough liquid to them. After 5 minutes, add this mixture to the flour and knead. If needed, add a small amount of water to the dough to make it smooth and non-sticky. This dough needs to rest for 1 to 2 hours.
  4. Divide the resulting dough into 20 small chins. Then we spread each chin a little with our hands and place a ball of dates in the middle and collect the dough. After that, we put the dough on the board and spread it again with hand pressure. If you wish, you can use a mold or knife to make different shapes for cookies.   5. Place the doughs in the tray at a suitable distance from each other and make holes on it with a fork according to your taste. You can also make your favorite shapes on the cookies with various templates.
  6. Apply some egg yolk on the cookies with a special brush.
  7. Heat the oven for ten minutes at 180 degrees Celsius and then put the tray in it for 15 minutes.
  8. If your oven is equipped with a grill cooking system, you can turn on the upper element for 4 to 5 minutes after turning off the lower flame to toast the surface of the cookies.
